What You Can Grow Indoors This Winter

In Northern Utah, snow still covers the ground and temperatures still range from the 20’s to the 30’s. If you are itching to start growing a garden outside, you are going to have to wait a little bit longer.

The good news is that you can start growing plants indoors right now. Growing an indoor garden isn’t that complicated. You basically need three things: a sunny window (or a grow light), well-draining soil like potting mix, and a pot with good drainage (rocks or holes in the bottom). If you have these materials, then you can grow a number of different plants. Here is a list of a few possibilities to get you started thinking and dreaming. All the plants highlighted in this article are edible and full of nutrition. If you have family members who struggle to eat enough veggies, watching them grow in your own home is a great way to catch their interest. In a few months, we'll be back outside doing all the Utah landscaping we can dream of, but for now, here are somethings you can grow indoors.

Indoor Plant Ideas
  • Carrots. They are delicious to eat and easy to grow. They also have vitamin A, which is essential for eye health. You can grow them easily from seeds. Simply plant the seeds one inch apart. Keep the soil moist but not soaked. The seeds will germinate (start to grow) within 2 weeks.
  • Garlic greens. You may not have thought of growing these but garlic greens are a superfood with many health benefits. You can use them in the kitchen in place of scallions or green onions. To get greens, you actually plant garlic cloves in moist dirt. They germinate quickly, within a week. You should get a nice green stalk within a few weeks. Cut down the greens as you need them. They should grow back quickly.
  • Lemons. Doesn’t having a lemon tree in your home sound exotic? It is! Lemon trees take a while to mature and to bear fruit. If you want to harvest lemons, look for a dwarf lemon tree 2-3 years old. Lemons take 6-9 months to ripen. Even though they take time, you will enjoy seeing them on the tree in your house.
  • Salad greens. What do you like in your salad? Spinach? Romaine? Red leaf lettuce? Whatever you like you can grow. You can grow any of these greens from seeds. When they get big enough to harvest, don’t disturb the roots. Only take the outer leaves so the plants keep growing and replenishing.
  • Tomatoes. They are a great antioxidant and taste so much better grown at home rather than bought at a store. You can use a starter plant or grow these from seeds. Replant them outside when the weather warms up.
  • Basil. Who doesn’t love the smell of fresh basil? Basil is easy to come by. You can find a starter plant even at your local grocery store. Basil doesn’t need very much water. Water once per day or less. When you need basil for a recipe, use a few leaves from each plant. Don’t remove all the leaves from a single plant.
  • Other herbs. Growing herbs indoors in Utah can be easy and fun. Try cilantro, mint, chives, or rosemary. All of them are easy to grow and add flavor to any recipe.
